Some tables split the second they sit down. One person eats meat. One does not. The worst version of that lunch is a vegetarian guest picking at bread while everyone else has a plate. Namaste Nola cooks vegetarian dishes as full plates: paneer, spinach, cauliflower, lentils, and vegetarian biryani.
The Dietary Guidelines treat vegetables, beans, and peas as part of the pattern, not as a penalty for skipping meat (Dietary Guidelines for Americans). That is the standard to cook toward. A spinach curry or a paneer kebab should be something you order because you want it.
What to put in the center
Start with a grilled paneer or a cauliflower dish so the first thing on the table is not a meat plate. Add dal or another lentil curry, rice, and bread. People who eat meat can add a curry or a biryani without taking over the middle of the table.
Paneer is a fresh cheese made from cow's or buffalo's milk (Paneer). It grills, it holds a sauce, and it is the order most first-time vegetarian guests recognize.
Say it before you book
If the table has several vegetarians, say so when you reserve. For a set menu, say it on the parties form. The kitchen can plan the tray. The menu is the list to read before you promise a guest a specific dish.
Lunch ends at 2:45 PM. Dinner starts at 5:00 PM. The vegetarian plates are on both services.
